Turn Out Fresh Baguettes With This Kit From Manresa Bread

Avery Ruzicka, the co-founder and a partner in Manresa Bread, the sister bakeries to the Michelin three-star restaurant, Manresa, in Los Gatos, Calif., has assembled a kit for baking baguettes at home. The results, eight modestly sized loaves with properly crackling crusts, nice crumb and good flavor, are worth the two days of effort, much of it untended. In addition to premixed and measured flours, yeast and salt, the kit contains a baking stone, a heavy linen couche, a board for moving the loaves, and a razor and holder for slashing. The printed directions take you through the basics, but it pays to tune into Ms. Ruzicka’s exclusive video for necessary details like how to handle the dough and the fact that you’ll need additional flour. With the printed recipe, you’ll also have the measurements you need to obtain your own ingredients and replenish your breadbox.
